Bbq Beef Short Ribs With Garlic Mashed Potatoes And Braised Tomatoes
For The Braised Short Ribs: Season The Ribs With Salt And Pepper And Sear Them In A Pot With Vegetable Oil Over High Heat, Until A Good Caramelization Is Achieved.
Remove The Meat From The Pot And Reserve. Remove The Excess Fat That Remains In The Bottom Of The Pot.
To The Same Pot Add The Onion, Leek, Carrot And Celery Cut Into Cubes. Sauté For 15 Minutes Over Medium Heat. Add The Tomato Paste And Cook For Another 5 Minutes.
Add The Bbq Sauce And The Beef Broth, Add The Ribs That Have Been Previously Reserved And Add Water To Cover The Meat; Bring To A Boil, Lower Over Medium Heat And Cover.
Cook For About 4 Hours Or Until The Meat Comes Off The Bone. Remove From The Fire.
Strain The Sauce, You Will Have The Solids On One Side And The Sauce On The Other. Return The Liquid Sauce To The Fire Until You Achieve A Thick Consistency.
Take The Cooked Meat And Separate It From The Bones, Shred The Meat, At This Point It Is Very Important To Add Salt To Taste. Reserve The Bones.
In A Mold, Press Our Shredded Meat. Place Some Heavy Object And Reserve In The Refrigerator Until The Next Day.
Remove The Mold And Cut Into Pieces.
For The Garlic Mashed Potatoes: Peel The Potatoes, Cut Into Pieces And Boil In Salted Water.
Cut 10 Grams Of Garlic In Half Crosswise And Remove The Internal Germ. Add The Garlic To The Pot With The Potatoes While They Are Boiling.
Once The Potatoes And Garlic Are Cooked, Strain And Mash Them Through A Potato Masher.
Add The Cream, Butter, Salt, Pepper And Nutmeg To Taste.
For The Crispy Garlic: Cut The Garlic Into Thin Slices And Fry In Vegetable Oil For 2 Minutes Until Golden.
For The Braised Tomatoes: Heat The Olive Oil In A Pan, Add In The Bay Leaves And The Rosemary. Add The Tomatoes And Sauté For 3-4 Minutes, Stirring Occasionally Until The Skin Begins To Burst.
Assemble The Dish: Preheat The Oven To 200 Degrees
