Bbq Beef Short Ribs With Garlic Mashed Potatoes And Braised Tomatoes

  • Step 1

    For The Braised Short Ribs: Season The Ribs With Salt And Pepper And Sear Them In A Pot With Vegetable Oil Over High Heat, Until A Good Caramelization Is Achieved.

    Remove The Meat From The Pot And Reserve. Remove The Excess Fat That Remains In The Bottom Of The Pot.

  • Step 3

    To The Same Pot Add The Onion, Leek, Carrot And Celery Cut Into Cubes. Sauté For 15 Minutes Over Medium Heat. Add The Tomato Paste And Cook For Another 5 Minutes.

  • Step 4

    Add The Bbq Sauce And The Beef Broth, Add The Ribs That Have Been Previously Reserved And Add Water To Cover The Meat; Bring To A Boil, Lower Over Medium Heat And Cover.

    Cook For About 4 Hours Or Until The Meat Comes Off The Bone. Remove From The Fire.

    Strain The Sauce, You Will Have The Solids On One Side And The Sauce On The Other. Return The Liquid Sauce To The Fire Until You Achieve A Thick Consistency.

    Take The Cooked Meat And Separate It From The Bones, Shred The Meat, At This Point It Is Very Important To Add Salt To Taste. Reserve The Bones.

    In A Mold, Press Our Shredded Meat. Place Some Heavy Object And Reserve In The Refrigerator Until The Next Day.

    Remove The Mold And Cut Into Pieces.

    For The Garlic Mashed Potatoes: Peel The Potatoes, Cut Into Pieces And Boil In Salted Water.

    Assemble The Dish: Preheat The Oven To 200 Degrees

    In A Non-stick Pan Seal Our Short Ribs On Each Side. Put On A Tray And Add The Hot Bbq Sauce On Top. On One Side Of The Tray Put The Rib Bone That We Have Reserved Previously. Bake All Together For 10 Min.

    At The Base Of The Plate Place Our Mashed Potatoes, The Rib Bone And Our Glazed Beef Rib.

  • Step 19

    To Finish The Dish, Add The Chopped Chives And The Crunchy Garlic To The Rib.

  • Step 20

    Place The Braised Tomatoes On One Side.
